David Bitton to headline Australia Day celebrations

International chef, author, businessman and public speaker David Bitton is set to join Wingecarribee’s Australia Day celebrations this January as the Shire’s 2019 Australia Day Ambassador.

David was born in Paris and trained as a chef from age 15 in the French city before moving to a number of fine dining establishments across Europe.

Fate brought David to Australia in 1991 where he took up a position in The Treasury at The Intercontinental.  He then moved to further restaurants on Hayman Island and Melbourne before returning to Sydney in 1996 as Head Chef for The Gekko restaurant at the Sheraton on the Park.  It was here that David met his wife Sohani and together the pair founded Bitton in 2000.

Since then the business has grown with the launch of a product range of the same name, a small business consultancy and the opening of The Bitton Café and Grocer at Alexandria and more recently in Oatley.

Despite his success David has maintained an ‘open house’ philosophy and approach to food whereby guests are made to feel as if they’re coming home and can relax and enjoy their meal in the company of good friends.

David admits that the story so far has not been without its lows however those experiences have only fuelled his plans for the future which he will share with guests at his Australia Day address.

David’s address is sure to be one of the highlights of the Shire’s official 2019 Australia Day celebrations which start from 9.30am at the Berrima Court House.  The program will also feature a Citizenship Ceremony and the announcement of the Shire’s Citizen and Young Citizen of the Year awards.

Wingecarribee Shire Mayor, Councillor Duncan Gair said he looked forward to hearing from Mr Bitton.

“David has an amazing backstory working in some of the finest dining establishments across Europe and Australia,” he said.

“I can’t wait to hear of some of those kitchen tales, how he ultimately came to our shores and of his inspirations and plans moving forward.”

Wingecarribee Shire’s official Australia Day program starts at 9.30am on Saturday 26 January 2019 at Berrima Court House.  Celebrations continue with the grand parade at 12 noon.  Entertainment will continue until 4pm with rides, amusements and stalls.
